Have you been to the ‘health’ section of Coles and Woolies recently? Er, things are ruling right now, including VEGAN CHOCOLATE!! Makes baking cookies a whole lot more tempting (let’s be honest, vegan chocolate is better baked). In a large bowl whisk together 2cups rolled oats, 1.5cups each of gluten free flour and (100%) cocoa and a teaspoon each of baking powder and bicarb. In a mixer, beat 1cup sugar, 2 tablespoons of flaxseed (ground linseed), dash of vanilla essence, ½cup of soymilk and 1/3 cup of oil (any should be fine). Slowly fold in the flour mix and stir in some white and dark choc chips. Dollop on a baking paper-lined tray and bake for approx 10 mins or until you can gently touch the top without caving in the middle of the cookie.
